I’m sure you guys have heard of mug cakes before. Ya know, those often sub par recipes where you mix a few ingredients together in a mug, microwave it for a minute or two, and drizzle on some icing to make a cute little cake. My sister owns an entire book on mug cakes, even! (10/10 would recommend it, by the way.)
BUT have you heard of a mug MUFFIN?? I bet you haven’t! Because I made it up!! Well, I’m sure someone’s already thought of it and I’m not even original. But still. I thought of it independently of Pinterest!
I have a deep love for blueberry muffins, so I made mine with blueberries, but I definitely think you could sub in most other fruits with good results, especially any berries! (I’ll probably post a banana mug muffin recipe in the future since that’s going to require a bit more tweaking…)
When your bowl is just a mug, I know it can be hard to follow instructions like “fold in blueberries”. Luckily, this recipe is fairly forgiving, so just do your best to evenly distribute the ingredients and it’ll be all good. This is what the batter looks like…
As you can see, the muffins puff up a LOT once microwaved, so make sure your mug is plenty tall.
This recipe makes just one mugful of blueberry muffin. It’s a great one for when you’re in a hurry and need something to eat on the go, too!
